The History of Champagne Meets Macarons

Did you know that champagne is named after the region of northeast France? Can you guess what that region is called? Champagne. Imagine that! You see, all champagne is sparkling or bubbly wine, but not all sparkling wine is actually champagne. That’s because the region of Champagne is legally protected, and strict regulations allow only certain grapes and processes to create the aptly named Champagne drink. So, unless your sparkling wine is from the Champagne region, your bottle of bubbly is only that: a sparkling bottle of wine. Got it? Great. Now let’s get into the discovery of champagne.

Long before you or your great, great grandparents roamed the earth, there lived a Benedictine monk named Dom Groussard. Now, Groussard claimed he knew the origins of champagne. And back in 1821, the people of France were so excited that they finally had the answer to how champagne was first discovered. Goussard stated that it all started with a monk who lived at the Abbey of Hautvillers. His name was Dom Perignon. By accident, Dom had opened a bottle of wine that wasn’t completely fermented. And when he did, the cork popped out and the sparkling wine erupted out of the bottle like a volcano. This frightened Dom at first, but then his curiosity piqued and he decided to pour himself a glass. To his surprise, all five of his senses were awakened. He was first shocked by the sound of the fizzing, he then noticed the brightly colored liquid, breathed in the sweet aroma, enjoyed how the fizzing bubbles tickled his nose, and he basked in the unforgettable sweet yet savory flavor. Dom quickly yelled out to his monk friends, “Brothers, come quickly… I’m drinking stars!” Thus the development of sparkling wine. It’s a great story, isn’t it? Sadly, it’s not true.

As it turns out, Goussard had a knack for telling stories. And his story about the discovery of  champagne was one that the French believed for a very long time. The truth is, while Dom Perignon was a real person and a cellar master at the Abbey of Hautvillers, all of his work was well documented. And nothing mentioned his discovery of bubbly wine and drinking stars. Instead, the cork popping, celebratory, bubbly beverage we all know and love as champagne was called at one time called “the devil’s wine”.

Winemakers like Dom Perignon avoided bubbles because it meant the wine was not fully fermented. It also meant that the cork would either pop off, breaking other nearby wine bottles, or the wine bottle itself would explode. Dom Perignon wanted no part of that. But the French loved the charming legend far more than the truth, so they used it to promote the sparkling drink and to popularize the Champagne region. That said, the debate surrounding who actually created the champagne drink includes the Benedictine monks in Carcassonne in 1531, Christopher Merret, an English scientist in 1662, and more.

What we know for sure is that many legendary figures, like Jean-Remy Moet and Madame Clicquot-Ponsardin, had a hand in shaping the champagne production. And today, the Champagne region is known for having the perfect climate, soil, and environment to create the famous sparkling wines we know and love.
